Vedettes de Paris says its last guided cruise leaves at 17:45 in its summer season and that later boats are aperitif cruises. Vedettes du Pont Neuf offers its guided cruise by day and at night. No Bateaux Parisiens last sightseeing departure appeared on a source this guide could read. The Bateaux-Mouches product page states a later last high-season sailing (22:00), so confirm the last boat on its ticket page if you plan around it.

Vedettes de Paris lets a booked cruise be rescheduled up to 24 hours before departure. Vedettes du Pont Neuf says open tickets are subject to availability.
If the sailing you wanted is gone, three changes are open to you: another time on the same day, another pier, or another format. Daylight shows detail on the monuments. After dark the Eiffel Tower sparkles for five minutes at the start of each hour until midnight or 1 a.m., per its own site.
